Cilantro Guacamole

Guacamole with cilantro

Yields 4
  • 2 bunches Cilantro | chopped
  • 150 g (3⁄4 Cup) Fava beans
  • 150 g (3⁄4 Cup) Green peas
  • 2 Avocados
  • 1 Jalapeño | finely chopped
  • 1 bunch Spring onions | finely chopped
  • 4 tbsp Extra virgin olive oil
  • 2 Limes | juiced
  1. Boil beans and peas in salt water, then chop to make a rough paste. Mash avocado with a fork.
  2. Combine mashed peas, beans and avocado with spring onion, jalapeño, 3⁄4 lime juice and 3⁄4 olive oil.
  3. Toss cilantro with remaining lime juice and olive oil, and use it to garnish the guacamole.
  4. Serve with crunchy tortilla chips!
