- Rotisserie chicken, skin removed and meat diced
- Grape tomatoes, halved
- Orange pepper, cut into thin strips
- Zucchini, thinly sliced into rounds
- Balsamic Vinaigrette
- Pine nuts, toasted
- Goat’s Milk Cheese Crumbles
- Salt and pepper
Place the spinach on a platter or salad bowl.
In a mixing bowl, gently toss together the chicken, tomatoes, orange pepper, zucchini, and balsamic dressing. Lightly season with sea salt and pepper.
Spoon the chicken mixture on top of the baby spinach. Sprinkle with the goat's cheese crumbles and toasted pine nuts.
