cubed leftover cooked chicken (store-bought, grilled, baked or poached)

1 cup
diced red apple
250 mL
1/4 cup
chopped toasted walnuts

raisins

3 tbsp
finely chopped green onion

multigrain buns, split

Method

Step 1

In large bowl, mix yogourt, mayonnaise, mustard, salt and pepper. Stir in chicken, apple, walnuts, raisins and green onion.

Step 2

Fill 4 buns with the chicken salad.

Tips

Alternatively, serve chicken salad in lettuce cups or on crackers.
