Method

Step 1

Cook burgers on grill preheated to medium-high heat until cooked through, flipping once, roughly 5 to 6 min per side. Grill buns for 1 min to lightly toast.

Step 2

Heat oil in saucepan over medium heat; add finger chili and cook, stirring for 30 secs. Add milk and cook for a further 30 secs. Add cheese, stirring constantly until melted, 30 to 40 secs. Stir in pickled jalapenos (if using).

Step 3

To assemble: Arrange burger patty on bun, top with cheese sauce, another burger patty, cheese sauce, red onion and top bun

Tips

To dial down the spice, remove the membrane and seeds from the finger chili with a paring knife.
