Read fondue set operating instructions before use and set up equipment as directed. Bring a small amount of hot water to a gentle simmer inside the stainless steel bowl of the fondue set.
Stir the cream, honey, coffee cream liqueur (if using) and cardamom in a saucepan set over medium heat until steaming. Remove pan from heat and stir in the chocolate until smooth.
Transfer mixture to the fondue set's double boiler insert and carefully place in the fondue set.
