brewed coffee such as Sensations by Compliments Colombia Cartagena Medium Roast (brew stronger than package directions)

35% whipping cream, room temperature

unsalted butter, room temperature

Step 1

Place brown sugar in medium heavy-bottomed saucepan. Pour in coffee and set over medium heat. Cook 12 to 15 min., without stirring, until sugar is fully dissolved and mixture is foamy. Remove from heat; stir in cream, butter and salt. Serve drizzled over desserts such as cakes and ice cream, if desired.


For easy entertaining, make sauce ahead and reheat before serving. Sauce once cooled completely, can be stored in airtight container in fridge for up to 2 weeks.
Also try drizzling the sauce over whipped cream on desserts, hot chocolate or coffees.
After stirring in salt, mix in 2 tbsp (30 mL) Amaretto or Frangelico liqueur for bold, nutty notes.
