Ingredients

salmon fillets, such as steelhead or sockeye
5 oz/150 g
2 tbsp
lemon juice
30 mL
2 tbsp
olive oil
30 mL
salt and pepper to taste
Cajun spice to taste

hamburger or kaiser buns, split and warmed
1/4 cup
light mayonnaise
60 mL
4
lettuce leaves
8
tomato slices
8 to 12
cucumber slices
4
white or red onion slices
4
yellow or red pepper slices

Method

Step 1

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Place salmon fillets on parchment. Drizzle fish with lemon juice and oil; season with salt, pepper and Cajun spice. Bake 12 to 15 min., or until just cooked through.

Step 2

To assemble, spread buns with mayonnaise and fill salmon fillets, lettuce, tomato, cucumber, onion and red pepper. Close buns to serve.

Tips

Instead of salmon, try halibut or snapper fillets. Use tartar sauce instead of mayonnaise.
