Ingredients

Halloumi cheese, cut into ½-inch (2.5 cm) thick slices

1/2 cups cherry tomatoes

Kumato tomatoes or vine-ripe tomatoes, cut into wedges or slices

seedless watermelon, rind removed and cut into thick slices

¼ tsp tajin

small basil leaves

Method

Step 1

Preheat grill to medium-high. Grill halloumi and cherry tomatoes (using a grill basket if needed) until lightly charred and beginning to melt, flipping once, 1 to 2 mins per side.

Step 2

Arrange halloumi, cherry tomatoes and Kumato tomatoes on a platter with watermelon. Sprinkle tajin all over then drizzle with olive oil. Garnish with basil.
