Serves 4

1/4 cup
all-purpose flour
60 mL
1/4 tsp
each salt and pepper
1 mL
large fresh sage leaves
skinless, boneless chicken breasts (1 lb/500 g), each cut horizontally into 2 pieces
4 slices
thin Black Forest ham or prosciutto (approx. 3 oz/90 g)
1 tbsp
olive oil
15 mL
1/2 cup
sliced onion
125 mL
1 cup
reduced sodium chicken broth
250 mL
2 tbsp
balsamic vinegar
30 mL

Step 1

In a shallow dish, combine flour, salt and pepper. Set aside.

Step 2

Place 1 sage leaf on each piece of chicken and wrap with a piece of ham. Press gently to adhere. Dredge meat in the seasoned flour, tapping off the excess.

Step 3

In a large non-stick skillet, heat the oil over medium-high heat and cook the meat until golden brown and cooked through, about 4 min. per side. Transfer to a plate and keep warm. Add onion to skillet and cook until golden, about 8 min. Stir in broth and cook until liquid is reduced and slightly thickened, about 5 min. Stir in balsamic vinegar. Serve onion mixture over chicken.

This dish is inspired by a traditional Italian recipe that wraps the chicken with prosciutto to add flavour and tenderness, but our version uses ham for a more kid-friendly taste.
