Beef patties

Method

Step 1

For the beef patties: In a large bowl, combine the breadcrumbs and milk. Let sit for 2 minutes. Add the beef, egg and paprika. Season with salt. With your hands, mix until smooth. Shape into 4 large patties.

Step 2

In a large skillet over medium-high heat, cook the beef patties in the butter on each side until golden, about 6 to 8 minutes. Season with salt and pepper. Set aside on a plate.

Step 3

In the same skillet over medium heat, brown the flour for 5 minutes in the hot cooking fat, stirring often. Add more butter as needed. Whisk in the broth, mustard and Worcestershire sauce. Bring to a boil. Simmer over medium heat until the sauce thickens, stirring occasionally.

Step 4

Return the patties to the skillet and cook for another 2 minutes or until the meat is cooked through. Adjust the seasoning. Keep warm.

Step 5

For the cabbage and potato hash: Meanwhile, in a large non-stick skillet over high heat, cook the potatoes, carrot and onion in the butter, stirring often, until the potatoes are tender and golden. Add more butter as needed. Add the cabbage and cook for another 2 to 3 minutes or until just tender. Adjust the seasoning.

Step 6

Divide the hash and meat patties among four plates. Drizzle with the sauce.

Tips

For a more traditional take, serve it with mashed split yellow peas, simply cooked in water for 30 minutes, then crushed with a potato masher.
