- roasted red peppers, drained and cut into strips

Method
Step 1
Add peppers, vinegar, olive oil, orange juice, basil and chili flakes in bowl and toss to combine. Refrigerate at least 1 hr. (can be made several hours in advance).
Step 2
When ready to serve, set cheese on serving plate. Surround the cheese with the marinated peppers. Sprinkle peppers with parsley, if using. Spread sliced baguette or crackers with cheese and top with peppers.
Tips
To prepare homemade roasted red peppers, preheat oven 375°F (190°C). Place 2 medium red bell peppers in pie plate or baking dish. Roast for 30 to 40 min., turning once or twice, until skins are blistered. Remove from the oven and cover dish with foil; let peppers cool, about 20 min. Uncover and peel skins off peppers; slice in half and remove seeds.
