Ingredients

2 boxes
corn muffin mix
8.5 ounces each
1 cup
Lucerne® Whole Milk
5
Compliments Large Eggs
1 cup
Signal Frozen Cut Corn
2 cups
Sensations Shredded Tex Mex Cheese
1 tbsp
Compliments Butter

thick-cut bone-in smoked pork chops, cooked (about 2 pounds total)

Method

Step 1

Preheat oven to 400°F.

Step 2

In a large bowl, mix together muffin mix, milk, and eggs until smooth.

Step 3

Stir in frozen corn and cheese until well blended.

Step 4

Pour into a well greased 9-inch square baking pan.

Step 5

Bake until bread is browned and firm when gently pressed in center, about 25 minutes.

Step 6

Cool slightly.

Step 7

A few minutes before bread is done, melt butter in a large frying pan over medium-high heat.

Step 8

Add pork chops and cook, turning once, until chops are lightly browned and heated through, 5-7 minutes.

Step 9

Serve with warm cornbread cut into squares.

Tips

Healthier Alternative :For a lower-fat cornbread, substitute low fat milk and 2% Milk.
