Ingredients

2 tsp
freshly grated lime zest
(10 mL)
1 tsp
flaky sea salt
(5 mL)
1 tsp
ancho chili powder
(5 mL)
3 baby
cucumbers, peeled into ribbons
2 ripe
Ataulfo mangoes, peeled, pitted and thinly sliced
2
peaches, pitted and sliced into wedges
1 1/2 cups
strawberries, hulled and halved
(375 mL)
Lime wedges to garnish

Method

Step 1

Combine lime zest with salt and chili powder in a small bowl, using your fingertips to lightly crush salt flakes. Transfer half of mixture to a small serving dish. Set aside.

Step 2

Layer cucumber ribbons on a large platter, folding them over one another, with mangoes, peaches and strawberries. Sprinkle with remaining half of salt mixture. Squeeze over a wedge of lime, then garnish salad with additional wedges. Serve immediately with remaining salt.
